Ingredients (Serving size: 30 ea.)
2 cups japchae
1 cup tofu (drained, mashed)
1 egg
1/2 cup Asian chives
30 ea. dumpling wrappers
salt & pepper
deep frying oil
Dipping sauce : 1 tbsp soy sauce, 1 btsp vinegar, 1/2 tsp red pepper flakes, 1 tsp scallion, 1/2 tsp sesame seeds
Optional : roasted seaweed
1. Chop chives and japchae into 0.5 inch. You can buy pre-made japchae at Hmart or make it with our japchae recipe! Wrap tofu in paper towels, microwave for 1-2 minutes, and mash it with a knife.
2. In a mixing bowl, place the chopped japchae, chives, tofu and a egg yolk, mix them. Add salt and pepper to taste. You can add ground meat or kimchi according to your taste.
3. Place a dumpling wrapper on clean, dry work surface, use a spoon to paint the egg wash around the edge of each dumpling, put 1 tbsp of filling at the center of a wrapper, then fold over, pinching the edges together firmly with a fork. Repeat until using all of the filling. You can wrap a strip of seaweed around wrappers to decorate it.
4. Pour oil into a large deep frying pan, heat it up to 360ºF. Fry dumplings until golden brown, drain on paper towels. You can store leftovers in the freezer before frying, and steam or pan fry or deep fry whenever you are ready to eat!
5. Mix all of the dipping sauce ingredients, serve with nicely fried dumplings!
