1. Heat a pan and stir fry chopped veggies over medium heat, salt and pepper to taste. When it’s 80% cooked, transfer to a big bowl. Add cooked rice and parmesan cheese, mix it well. Set aside and cool down.
2. Put sausages onto skewers. Place plastic wrap on a flat surface (use a sushi rolling mat if you have one, it will make the rolling so much easier). Spread 1/4cup of the rice mixture into flat rectangular shape, just like Kimbap or sushi! Put one sausage in the center and roll it up tightly.
3. Hold the shape using plastic wrap, you can put them in freezer for a while if you need. Coat with beaten egg, then bread crumb. Repeat one more for double coat!
4. Heat up oil in a pot until breadcrumbs rise in 3 second in the oil. Deep fry the rice dogs until it turns golden brown. Drizzle ketchup on them and enjoy!
