Saucy & Festive BBQ Burrito / 양념갈비 부리또

Burritos just got better with the addition of Korean barbecue and kimchi! The secret sauce combines gochujang, doenjang, mayo, and even peanut butter to complement the rice and protein while the greens give it the fresh aroma to ease the kick of the spice! Happy Cinco de Mayo!

Ingredients
4 Large Flour Tortillas
2 Instant Cooked Rice
1 ¼ oz Green Romaine Lettuce, thinly chopped
10 Perilla Leaves, thinly chopped
1 oz Cilantro, chopped
½ oz Scallion, chopped
5 ⅝ oz Kimchi, chopped
Roasted Sesame Seeds
1 tbsp Cooking Oil

Ssamjang Sauce
2 tbsp Mayonnaise
1 tbsp Gochujang (Korean Red Pepper Paste)
½ tbsp Peanut Butter
1 tbsp Doenjang (Korean Soybean Paste)
¾ oz Scallion, chopped
1 Cheongyang Chili Pepper (Korean Green Chili Pepper)

Marinade
9 ½ oz Beef Short Ribs, bite-sized
4 tbsp Soy Sauce
2 tbsp Mirin
2 tbsp Sugar
1 tbsp Green Plum Syrup
2 tbsp Garlic, minced
⅜ oz Scallion, cut into 1 ½ inches
½ tbsp Sesame Oil
