These ribs are broiled until tender, then grilled with Korean sweet-spicy sauce. That's it! Super simple and finger-licking delicious.
Ingredients (serving size: 4)
1 ½ racks pork ribs
Brine : half of large onion, 2stems scallion(cut in half), 10ea peppercorns, 1tbsp soy bean paste, 5 cloves garlic, 2tbsp mirin, 4cups water
Sauce : gochujang(hot pepper paste) 3tbsp, A1 sauce 5tbsp, water 2tbsp, corn syrup 5tbsp, sugar 1tbsp, mirin 1tbsp, mustard 1tbsp, ketchup 2tbsp, oyster sauce(or soy sauce) 1tbsp, minced garlic 1tsp, sesame oil 1tbsp
Garnish : sesame seeds, scallion
Prep : Remove the thin membrane attached to the underside of the ribs. Rinse the ribs and cut them in half, soak in cold water for an hour.
1. In a large pot, bring the water, ribs and all the brine ingredients to a boil over medium high heat. The brine ingredients will tenderize the meat and eliminate the unique smell of pork. Boil them for an hour.
2. In the meantime, shall we make the Korean sweet and spicy sauce? In a mixing bowl, mix all the sauce ingredients well. If you want more spicy, add gochugaru (hot pepper flakes).
3. After an hour boiling, take ribs from the pot, place them on a grill. Grill ribs, brush with the mixed sauce, keep basting and turning frequently, for 20 minutes, or until nicely browned.
4. Cut ribs, garnish with scallion and sesame seeds. Serve warm.
