Serves: 1

Numbing Cucumber Salad / 사천 후추 오이 샐러드

 

Ingredients:

1 cup Cucumber, large cut, de seeded

4 tbsp Cucumber Dressing

3 tbsp Tahini Yogurt

1 tbsp Cilantro

1 tbsp crushed Peanuts

1 tsp Sesame Seed, White

2 tbsp boiled Ground Chicken

 

Cucumber Dressing:

4 tbsp Tamari Soy Sauce

1 tbsp Mirin

1 tbsp Sugar

1 tbsp Sesame Oil

1 tbsp Black Vinegar

 

Tahini Yogurt / Sesame Yogurt:
3 tbsp Greek Yogurt

2 tbsp Tahini

1 tbsp Lemon Juice, fresh

1 tsp Numbing Peppercorn Oil (optional)

1 tbsp Salt

 

Directions:

1. First, make the cucumber dressing by dissolving the sugar in tamari soy sauce and mirin.

Whisk until dissolved and mix with everything else after.

 

2. Then, in a separate bowl, whisk together the greek yogurt, tahini, lemon juice,

numbing peppercorn oil and salt until well incorporated.

3. Lastly, toss cucumber with cucumber dressing, cilantro, scallion and boiled chicken.

4. On a bed of tahini or sesame yogurt, lay the dressed cucumber and

garnish with sesame seed and peanuts. Enjoy!
